Professional cake Icing

The course is run by Susan Diana Edgcumbe, a specialist in this field with many years of teaching behind her. Di studied a B.Sc degree at the University of Natal majoring in Biological Sciences. The combination of her botanical knowledge of floral anatomy and her cake decorating experience of 25 years gives her the edge on creating realistic flowers in icing sugar. She has been a member of the South African Cake Decorators Guild for 25 years and has participated in numerous shows, exhibitions and competitions, including the Natal Witness Garden Show in Pietermaritzburg. She has won the Floral Sugarcraft category in this show 19 times. Students will be taught the intricate art of cake decoration and will be required to showcase their talents at year-end by decorating their own cakes.


Wine Course

The School runs a wine appreciation course for the first year students. This course covers the basics on wine and wine making as well as food and wine pairing. The course is run by professionals in the wine industry and students receive a certificate of attendance on completion of the course.

Sushi Course

Roger (Watchara) Srisompoch, one of the top sushi chefs in the country, has a personal passion for the art of sushi, and this comes through in his teaching. He is an expert in one of the fastest growing food fads around the World, and has many years of experience in what has become an essential part of any Chefs education. The students will be able to take this specialized knowledge with them into Industry and it will stand them in good stead when entering the job market.

First Aid Course and Fire Safety Course

Both these courses are run by trained professionals and form an important part of the safety aspect of the course. Knowing what do in an emergency situation can be critical and may help save the life of a colleague or friend.


Advanced Specialist Work

For this specialized part of the course, we get a number of internationally recognized specialists in a diverse range of cooking fields, to teach the students. This part of the student’s education is an added bonus and is something we are proud to offer at the school
